Understanding Gluten-Free Baking

Before diving into the recipe, it's essential to understand the fundamentals of gluten-free baking. Gluten, a protein found in wheat, barley, and rye, gives baked goods their elasticity and structure. In gluten-free recipes, alternative flours like almond, coconut, or rice flour are used to achieve similar results.

Gluten-free baking also requires a different approach to measuring ingredients. While regular flour is typically measured by volume, gluten-free flours are usually measured by weight for accuracy. This recipe uses a combination of ground almonds and gluten-free plain flour, ensuring a light, moist texture.

Choosing the Right Gluten-Free Flour

When selecting a gluten-free plain flour, opt for a blend that includes a mix of starches and gums to replicate the structure of wheat flour. Some popular brands include Doves Farm and Freee by Tesco. Always check the packaging to ensure the flour is certified gluten-free.

For this recipe, we'll also be using ground almonds, which add a lovely nutty flavor and help to bind the cake. You can use either store-bought ground almonds or make your own by blitzing whole almonds in a food processor until they reach a fine, flour-like consistency.

Preparing the Fruit Soak

One of the hallmarks of a traditional Christmas cake is its rich, fruity flavor. This comes from soaking a mixture of dried fruits in brandy or sherry for several weeks before baking. While this step isn't strictly necessary, it does allow the flavors to develop and intensify.

For Mary Berry's mini gluten-free Christmas cakes, we'll be using a combination of currants, raisins, sultanas, and mixed peel, along with a generous splash of brandy. The fruit should be soaked for at least a week, but you can leave it for up to three months for even deeper flavors.

Three Ingredient Mini Christmas Cakes
Three Ingredient Mini Christmas Cakes
  • 300g gluten-free plain flour
  • 100g ground almonds
  • 1 tsp mixed spice
  • 1 tsp baking powder
  • 250g unsalted butter, softened
  • 250g light muscovado sugar
  • 4 large eggs
  • 85g gluten-free porridge oats
  • 3 tbsp brandy (optional)
  • 250g mixed dried fruit (soaked in brandy for at least a week)
  • 100g glacé cherries, halved
  • 50g flaked almonds

Mixing the Dry Ingredients

In a large bowl, combine the gluten-free plain flour, ground almonds, mixed spice, and baking powder. Whisk together until well mixed, breaking up any lumps. Set aside for now.

Next, in a separate bowl, cream together the softened butter and light muscovado sugar using an electric mixer. Continue until the mixture is light, fluffy, and pale in color. This should take around 3-5 minutes.

Combining the Wet and Dry Ingredients

Once your butter and sugar mixture is ready, beat in the eggs one at a time, ensuring each egg is well incorporated before adding the next. If the mixture begins to curdle, add a spoonful of the gluten-free flour to bring it back together.

Now, gently fold in the gluten-free flour mixture, gluten-free porridge oats, and the soaked mixed dried fruit, including any brandy from the soaking process. Finally, stir in the glacé cherries and flaked almonds, ensuring they're evenly distributed throughout the mixture.

Preparing the Molds

Preheat your oven to 160°C (140°C fan) or Gas Mark 3. Grease and line a 12-hole muffin tin with paper cases, ensuring they're well secured to the sides. Alternatively, you can use individual mini cake tins for a more professional finish.

Spoon the cake mixture evenly into the prepared cases or tins, filling them about two-thirds full. This will allow for some rise during baking. Use the back of a spoon to gently press the mixture down and ensure it's evenly distributed.

Baking the Cakes

Place the tin or tins onto a baking sheet and put them in the preheated oven. Bake for 25-30 minutes, or until a skewer inserted into the center of the cakes comes out clean. If the cakes begin to brown too quickly, tent the tin with some foil to prevent over-browning.

Once baked, remove the cakes from the oven and leave them to cool in the tin for 5 minutes. After this time, carefully transfer the cakes to a wire rack to cool completely. This will help to prevent them from sinking or becoming soggy.

As the cakes cool, you can begin preparing the marzipan and royal icing for decoration. Traditionally, Christmas cakes are covered in a layer of marzipan before being topped with royal icing. However, you can skip this step if you prefer a simpler, naked cake.

Once the cakes are completely cool, store them in an airtight container at room temperature for up to a week, or in the refrigerator for up to a month. This will allow the flavors to develop and intensify, making them even more delicious. Enjoy your gluten-free festive treats!
