To begin, cream together 1 cup (227g) of unsalted butter and 1 1/2 cups (300g) of granulated sugar until light and fluffy. Beat in 4 large eggs, one at a time, ensuring each egg is well incorporated before adding the next. In a separate bowl, combine 3 cups (360g) of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Gradually add the dry ingredients to the butter and egg mixture, alternating with 1 1/2 cups (355ml) of whole milk. Fold in 1 tablespoon of pure vanilla extract and 1/2 cup (120ml) of sour cream, which adds moisture and richness to the cake.

Preparing the Pans

To ensure even baking and easy removal, grease and flour three 8-inch (20cm) round cake pans. Line the bottoms with parchment paper for an extra layer of protection. This will help your cakes release perfectly from the pans and maintain their beautiful shape.

Divide the batter evenly among the prepared pans and smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely before frosting.

Making the Buttercream Frosting

While the cakes are cooling, prepare the buttercream frosting that will bring our flower garden to life. In a large bowl, beat 1 1/2 cups (340g) of unsalted butter until creamy. Gradually add 6 cups (720g) of powdered sugar, mixing well after each addition. Beat in 1/4 cup (57ml) of heavy cream and 1 tablespoon of pure vanilla extract. Add more powdered sugar or cream as needed to achieve a smooth, spreadable consistency.

Once the cakes have cooled completely, level the tops if necessary and place the first layer on a serving plate or cake stand. Spread a generous layer of buttercream on top, then add the second layer and repeat. Place the final layer on top and apply a thin crumb coat of buttercream to seal in any crumbs. Chill the cake for 30 minutes to set the crumb coat, then apply a final layer of buttercream, leaving some for piping the flowers.

Creating the Edible Flower Decorations

The secret to our Flower Garden Cake's enchanting appearance lies in the edible flower decorations. You can use fresh, organic flowers such as pansies, violets, and rose petals, ensuring they've been properly washed and dried. Alternatively, you can use store-bought edible flowers or make your own using gum paste or fondant.

To create a natural, garden-like arrangement, place the flowers and leaves on the cake in clusters, rather than covering the entire surface. Use a small offset spatula or spoon to gently lift the buttercream and place the flowers, pressing them lightly to adhere. For added dimension, pipe small rosettes or shells using a star tip and the remaining buttercream to create additional flowers and leaves.

Finishing Touches

Once you've arranged your flowers to your liking, step back and admire your beautiful creation. If desired, add a simple border around the base of the cake using a piping bag fitted with a small round tip. You can also write a charming message on the cake using a fine-tipped piping bag or edible marker.
